DUCK IN ORANGE SAUCE
Serves 2
Ingredients: 1 Duck
150g Onlon
150g Apples 1g
Thyme Salt Pepper
5g Paprika Sauce:
100g Onion
80g Carrots
60g Celery
300g Oranges
100mL Orange juice
500rmL Brown stock
1L Water 20g
Brown sugar Preparation Steps:
1. Preheat the oven to 180°C 2 Rthe neck then remove the wings by cutting through the bone just below the first joint
Cut the wings Into equal pieces and place them into a roasting tray Remove any surplus fat from the cavity and neck
3. Peel and slice the onion in half and quarter the apples Stuff the cavity of the duck with the seasoning,
thyme onion and apple Season the skin of the duck with salt and paprika for extra colour then tie truss the duck and place on top of the bones 6.
For the sauce: WPRW the 👌 and cut into matignon 7 Zest, peel and slice the oranges and simmer the zest until soft Cooking Steps:
1. Roast the duck at 180°C. Once it is browned add some water to prevent burning 2 Baste occaslonally and add the matignon after 1 hour Once the juice runs clear from the vent,
remove the duck and heat the roasting tray to clear the duck fat, strain and retun to the pan.
Add the brown stock and 2 the water and simmer for 45 minutes to produce the jus Cut the duck In half add the filling and bones to the jus,
